QUINOA, GOATS CHEESE AND OLIVE SALAD

INGREDIENTS
2 cups of cooked quinoa
60g of goat’s cheese – crumbled
12 black pitted olives cut into quarters
12 french beans lightly steamed
2 tbsp. of pepitas
½ tbsp. of lemon juice
2 tbsp. of olive oil

DIRECTIONS
Mix all ingredients together and dress with olive oil and lemon juice
