Serves 4 as a snack

INGREDIENTS

8 eggs
1 tub store-bought hummus
2 cups baby spinach

For Dukkah
⅓ cup almonds
⅓ cup walnuts
¼ cup flaxseeds
¼ cut sesame seeds
1 tsp fennel seeds
1 tsp cumin seeds
1 tsp coriander seeds
¼ tsp black peppercorns
½ tsp sea salt
4 scoops Modere Axis™ TreBiotic

METHOD

  • Toast nuts and seeds in a dry frypan over low/med heat until fragrant. Set aside to cool.
  • Toast spices in the same pan until fragrant. Set aside to cool.
  • Place nuts, seeds and spices into a food processor bowl and pulse until finely chopped (but not powdery).
  • Transfer to a bowl and add sea salt and Modere Axis™ TreBiotic. Mix well and store in an airtight container.
  • To serve, hard boil eggs, peel and coat in the dukkah. Spread hummus onto a plate, add spinach leaves and dukkah eggs.
  • Sprinkle with extra dukkah.
