INGREDIENTS
180ml SHAPE Raspberry & Lemon
¼ cup honey
¼ cup coconut oil
½ cup peanut butter
⅓ cup coconut sugar
1 tsp vanilla extract
Pinch of salt
1½ cups oats
1 cup puffed quinoa
⅓ cup almond meal
½ cup desiccated coconut
½ cup mixed nuts, roughly chopped
½ cup mixed seeds
¼ cup freeze dried raspberries
METHOD
- Step 1. Preheat oven to 180C.
- Step 2. Line a 20x30cm baking tray with baking paper.
- Step 3. Place honey, coconut oil and peanut butter into a microwave-safe bowl and microwave for one minute; once melted whisk until smooth
- Step 4. Add Shape, sugar, vanilla and salt and whisk to combine.
- Step 5. Add remaining ingredients, except freeze dried raspberries and stir well to combine.
- Step 6. Transfer mix to the baking tray and spread out evenly. Bake for 20 minutes or until golden. Step 7. While still warm, scatter over freeze dried raspberries and press into the surface with a spatula.
- Step 8. Allow to cool to room temperature then place in the refrigerator overnight to set. Portion into bars and store in a sealed container at room temperature.
