Elevate your favourite spinach and feta pastries with the power of Axis PhytoGreens. These delicious, good for the soul hand pies are the perfect wholesome snack, great for lunchboxes or afternoon tea with friends.

Makes 12

INGREDIENTS

2 tbsp olive oil
1 onion, finely diced
2 garlic cloves, finely chopped
500g frozen spinach, thawed
¼ cup mint, finely chopped
1 tsp sea salt
½ tsp pepper
3 scoops Axis PhytoGreens
2 eggs
250g feta
Tzatziki, to serve

For pastry
100g wholemeal plain flour
200g self raising flour
160g butter, cubed
½ tsp salt
3 tbsp greek yoghurt

METHOD

  • Place the flours, butter and salt into a food processor and pulse to form a coarse breadcrumb-like texture.
  • Add the yoghurt and pulse until a rough dough forms.
  • Place dough onto a floured bench and form into a disc, wrap in clingfilm and refrigerate for at least 30 minutes.
  • Meanwhile, squeeze out excess moisture from the spinach and place into a medium bowl.
  • Heat olive oil in a small frypan, add onion and garlic and sauté until softened.
  • Add the onion mix to the spinach with the mint, seasoning, Axis PhytoGreens, egg and feta and mix well.
  • Preheat oven to 200C.
  • Roll out the pastry to a thickness of 3mm and cut into 10cm rounds. Place a heaped tbsp of filling in the centre of the pastry rounds and brush the rim of the pastry with water.
  • Halve the pastry to form a half moon and crimp the edges to seal.
  • Place pies on a baking paper lined baking tray and bake for 20 minutes, or until golden.
  • Allow to cool slightly before serving with tzatziki on the side.
